If you having a Persian friend over for dinner, or maybe to impress your Persian partner, This recipe will definitely do it! An American customer made this Tah-dig perfectly the first time. Pictures below is actual pictures from her experience making Tah-dig.
First step is to wash the basmati rise at least 10 times or until the water run's clear. The brand that is used is the Tilda basmati rice original package. This step is the most important part. After the rice has been washed let the rice sit in a bowl with cold water for at least 20 minutes some say even over night.
Bring a large pot with 4 cups of water to a boil. Drain rice and add to boiling water. Allow to cook, uncovered on medium-high heat for exactly 8 minutes (Set your timer.) While this rice is cooking in a small mug or container put hot water, and saffron. This gives the rice some coloring, and set aside
.
Once cooked for exactly 8 minutes drain the rice in a colander and run cold water. The customer used Sadaf rice cooker for the next step. Add to the bottom half the cup of the saffron water. Add the rice to the rice cooker in a pyramid shape. Using the back of your large spoon or any utensil, poke holes into the pyramid being careful not to go all the way down.
Use the lid that comes with the rice cooker add a tea towel to cover the top.This keeps all the steam in the pan. Allow to cook for about 35-40 minutes. Remove lid and place plate on top, carefully inverting the pan so the bottom of the rice is up. Or you can scoop the rice out and break the tah-dig apart and scatter around the edges.
